Holiday Recipe: No-Bake Chocolate Coconut Haystacks
These tasty sweet-salty treats take me down a nostalgic memory lane of childhood experiences in Girl Guides where I first fell into fundraising and leadership.
The super-simple-quick cookie recipe is from a 2-inch plastic coil bound 4-H cookbook published nearly a half-century ago, one that still graces many a kitchen shelf in our family.
Perfect for a potluck dessert platter and holiday hostess gift.
Ingredients
- 3 cups Oats
- 1 cup Unsweetened Coconut
- 2 cups Sugar
- ½ cup Milk
- ½ cup Butter
- ½ cup Unsweetened Cocoa Powder
- ½ tsp Vanilla Extract
- ½ tsp Kosher Salt
Directions
- In a medium pot over medium high heat, add the butter, milk, cocoa, salt, and sugar.
- Bring to a boil for 2-4 minutes while whisking constantly.
- At 4-minute mark, turn off heat and add in the oats, vanilla, and coconut.
- Fold the mixture together using a spatula.
- Use an ice cream scoop to scoop out haystacks and place on a parchment paper-lined baking sheet.
- Let cool for 10 minutes.
- Ready to serve (or freeze).
