Holiday Recipe: No-Bake Chocolate Coconut Haystacks

These tasty sweet-salty treats take me down a nostalgic memory lane of childhood experiences in Girl Guides where I first fell into fundraising and leadership.

The super-simple-quick cookie recipe is from a 2-inch plastic coil bound 4-H cookbook published nearly a half-century ago, one that still graces many a kitchen shelf in our family.

Perfect for a potluck dessert platter and holiday hostess gift. 

 

Ingredients 

  • 3 cups Oats
  • 1 cup Unsweetened Coconut
  • 2 cups Sugar
  • ½ cup Milk
  • ½ cup Butter
  • ½ cup Unsweetened Cocoa Powder
  • ½ tsp Vanilla Extract 
  • ½ tsp Kosher Salt

 

Directions

  1. In a medium pot over medium high heat, add the butter, milk, cocoa, salt, and sugar.
  2. Bring to a boil for 2-4 minutes while whisking constantly.
  3. At 4-minute mark, turn off heat and add in the oats, vanilla, and coconut.
  4. Fold the mixture together using a spatula.
  5. Use an ice cream scoop to scoop out haystacks and place on a parchment paper-lined baking sheet.
  6. Let cool for 10 minutes.
  7. Ready to serve (or freeze).
