Holiday Recipe: Mum’s Walnut Torte

Okay, what you have to know about mum’s recipes … she gave you the ingredients without a bunch of instructions. The instructions came by doing. I hope I’ve captured them accurately.

Ingredients

  • 1/2 cup of shortening
  • 1/2 cup of sugar
  • 1/2 tsp of vanilla
  • 1/3 cup of milk
  • 4 eggs – separated
  • 1 cup flour
  • dash of salt
  • 1 tsp baking powder
  • 1/8 tsp of cream of tartar
  • 3/4 cup finely chopped walnuts

 

Directions

  1. Cream the shortening, sugar and vanilla together until light and fluffy.
  2. Add egg yolks, one at a time and beat well.
  3. Sift all the dry ingredients in a bowl.
  4. Add dry ingredients to the wet ingredients a bit at a time, alternating with the milk.
  5. Pour into two 8-inch greased cake pans.
  6. Beat the egg whites with 1/8 tsp of cream of tartar until stiff and glossy but not too dry.
  7. Stir the walnuts into the beaten egg whites.
  8. Spread the egg white mixture evenly on top of the batter evenly.
  9. Bake for one hour in a 300-degree oven.
