Holiday Recipe: Mum’s Walnut Torte
Okay, what you have to know about mum’s recipes … she gave you the ingredients without a bunch of instructions. The instructions came by doing. I hope I’ve captured them accurately.
Ingredients
- 1/2 cup of shortening
- 1/2 cup of sugar
- 1/2 tsp of vanilla
- 1/3 cup of milk
- 4 eggs – separated
- 1 cup flour
- dash of salt
- 1 tsp baking powder
- 1/8 tsp of cream of tartar
- 3/4 cup finely chopped walnuts
Directions
- Cream the shortening, sugar and vanilla together until light and fluffy.
- Add egg yolks, one at a time and beat well.
- Sift all the dry ingredients in a bowl.
- Add dry ingredients to the wet ingredients a bit at a time, alternating with the milk.
- Pour into two 8-inch greased cake pans.
- Beat the egg whites with 1/8 tsp of cream of tartar until stiff and glossy but not too dry.
- Stir the walnuts into the beaten egg whites.
- Spread the egg white mixture evenly on top of the batter evenly.
- Bake for one hour in a 300-degree oven.
