Holiday Recipe: Mallabone Stampede Chili

Ingredients

  • 2 lbs. lean ground beef
  • 1 lb. sausage meat
  • 3 medium onions
  • ¼ cup chopped celery
  • 1 -28 oz. can diced tomatoes
  • 250 ml. tomato soup
  • 250 ml. beef broth
  • 540 ml. red kidney beans (rinsed)
  • 3 tsp. kosher salt
  • 2 tbsp. chili powder
  • A sprinkle of cayenne powder
  • 340 ml. jar fire roasted red peppers (chopped)

Directions

  1. Chop onions and celery and sauté until onions are translucent.  
  2. Brown ground beef and sausage and drain off fat.  
  3. Add onions and celery into a dutch oven or crock pot.   
  4. Add the other ingredients and cook ( 3-4 hours in a dutch oven, 7-8 hours in a crock pot)   
  5. Cool and leave for at least one day.
  6. Reheat and serve.
