Holiday Recipe: Babcia’s Piroshki
This photo is the original recipe written in Polish by my Babcia and next to it – written in English by me as we went through it together in her kitchen – on a piece of cardboard.
Ingredients
Dough
- 1 1/2 cup of warm water
- 1 tsp yeast
- 1 egg
- 1 tbsp oil
- 1/2 tsp salt
- 1/2 tbsp sugar
- 5 cups flour (+/-)
- Mix to make a soft dough. Let it rise to double the size covered with a tea towel.
Filling
- 1/2 cabbage
- 1/2 onion
- Black pepper
- 4 hard boiled eggs
- Chop cabbage and onion finely and sauté in butter or margarine. Let the mix cool. Chop the eggs and add to the mixture.
Directions
Use floured hands to take 3 to 4 inch pieces of the dough, stretch the dough and fill with the mixture. These should be the size of a small dinner bun. Let these filled Piroshky rise again. These can be fried in oil at 350 degrees.
