Holiday Recipe: Babcia’s Piroshki

This photo is the original recipe written in Polish by my Babcia and next to it – written in English by me as we went through it together in her kitchen – on a piece of cardboard.

Ingredients

Dough

  • 1 1/2 cup of warm water
  • 1 tsp yeast
  • 1 egg
  • 1 tbsp oil
  • 1/2 tsp salt
  • 1/2 tbsp sugar
  • 5 cups flour (+/-)
  • Mix to make a soft dough. Let it rise to double the size covered with a tea towel.


Filling

  • 1/2 cabbage
  • 1/2  onion
  • Black pepper
  • 4 hard boiled eggs
  • Chop cabbage and onion finely and sauté in butter or margarine. Let the mix cool. Chop the eggs and add to the mixture.


Directions

Use floured hands to take 3 to 4 inch pieces of the dough, stretch the dough and fill with the mixture. These should be the size of a small dinner bun. Let these filled Piroshky rise again. These can be fried in oil at 350 degrees.
